Making the Perfect Bella Paella Meat Paella
We aren’t precious about our recipe as we know it takes years of practice to make the perfect Paella, but we would love for you to try and make your own.
Don’t forget to throw in whatever you fancy, if you don’t like some of the ingredients below. The key thing is just to have fun with. Be experimental and be patient. Make sure everything is cooked to perfection and move the rice around to make sure it doesn’t stick!

Paella De La Familia Moreno
Ingredients for 4 persons
100 gms of pork loin/fillet
100 gms of chicken
100 gms chorizo
1 medium onion
½ red pepper
½ green pepper
2 tomatoes or 1 Tin of Chopped Tomatoes
2/3 cloves of garlic
1 glass dry white wine
2 cubes avecrem or chicken oxo
100gms rice per person
Hot water
Approx 1 level tsp of saffron colouring
Olive oil
Salt and pepper to taste
Method
1. Into a 30 cm paella pan, put approx 3 tbs of olive oil. Over a medium heat, add diced pork and chicken and fry well stirring all the time until golden.
2. Add diced onion and pepper and fry until soft, then add diced tomatoes and sliced chorizo.
3. Add salt and pepper, wine, chopped garlic and avecrem/oxo and cook until the wine has reduced.
4. Add hot water to the pan until it reaches the level of the base of the handles and when it begins to boil, add the rice. Stir well.
5. Add saffron/colouring and cook over a medium heat until the rice is cooked, adding more water if needed.
6. Decorate with sliced tomatoes/roasted red peppers.
7. Eat straight out of the Pan from the Outside in! This is a must in the Moreno Household!
